For Dough:

  • 2,5 water glasses of flour,
  • 1 water glass of water (200 ml),
  • 1 dessert spoon of salt
  • 7 table spoons of margarine (at room temperature)

For the mixture:

  • 2 onions
  • 300 g minced calf meat
  • 1 tea spoon of black pepper
  • 1 dessert spoon of salt
  • 2 table spoons of sunflower oil,
  • 1–2 black pepper seeds


Add 2,5 water glass of flour, 1 water glass of water, 1 dessert spoon of salt into a deep plate and knead dough. Then separate the dough into 4 pieces. Roll each piece in your hand and cover it with cheesecloth and wait for almost 15 minutes.

In order to prepare the mixture, mince the 2 average size onions. Heat the 2 table spoon of sunflower oil on an average size fry pan. Then add the minced onions and roast them until they have yellowish color. Later, add 300 g minced calf meat and continue roasting over a high temperature. When the minced meat is roasted slightly, add 1 dessert spoon of salt and 1 teaspoon of black pepper to improve taste. Then, close the cooker. 

Roll out the dough which is waited until the pieces have 15 cm diameter. Soften the margarine, which is at room temperature, with your hand in order to have a texture which is convenient to lay on. Apply the margarine on the dough until it covers all the surface of it. Put the dough pieces on each other and wait for 15 minutes. During this time period, baste the tray with 1 tablespoon of margarine. Then, make the dough pieces thin by pulling them with your hand. If there are thick parts on the borders cut and separate them with a knife. Fold the border parts through the center and put the mixture that you prepared and spread it on the folded dough piece. After that, Roll out the dough and Curl it through inside with s shape. Then put them all on the tray. Finally, cook in a 180oC oven for 35 minutes and serve hot.
