INGREDIENTS
Dough Ingredients (For 10 average size simits)
- 1 water glass (250 ml 1cup) of warm water
- 1 water glass of milk
- 1 egg
- 2 table spoons of yeast powder
- 2 table spoons of granulated sugar
- 2 dessert spoons of salt
- 2–3 table spoons of oil
- 4–5 water glasses of all purpose flour
PREPARATION
Roast the sesame over a medium heat by continuously mixing at least half an hour. After roasting the sesame, you can pass through kneading dough process. Put warm milk and water into a deep plate and add granulated sugar and yeast powder and then mix them. Wait for 2-3 minutes for leaven of yeast. After leaven of the yeast, add salt, oil, egg and 5 water glass of flour and then knead dough. Make the dough which sticks to your hand a soft dough by using ½ water glass of flour. If it still sticks to your hand, you can add the other half of it. Later, flour the bench and put the dough on it and then flour the dough surface, too. Close a hot wet towel on the dough and wait for approximately half an hour for fermentation. After that, separate the fermented dough into 10 equal pieces. Shape every piece a like long lane. Fold in two each pieces and give them spiral shape. Then unite the two ends by your two wet hands. Wait the shaped dough pieces on the bench. Add little amount of water in the molasse for dilution. Lay the molasse-water mixture on them. After that, sop the simits in roasted sesame. Put the simits on greased tray. Before you put the simits in the oven, heat up the oven at 200oC for 5 minutes and then off the oven. Put the simits in that hot oven and wait their fermentation for 10-15 minutes. Finally cook them at 250oC for 10-15 minutes and serve.
